- 1 lb chicken breast cooked and shredded
- 2 cans 15 oz white beans (drained and rinsed)
- 1 medium onion diced
- 2 cloves garlic minced
- 1 can 4 oz diced green chilies
- 1 cup chicken broth
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp oregano
- 1/2 cup heavy cream or half-and-half
- 1 cup corn kernels fresh or frozen
- Juice of 2 limes
- Zest of 1 lime
- Salt and pepper to taste
Prepare Chicken: Shred the cooked chicken breast and set aside.
Sauté Aromatics: In a large pot, sauté the onion and garlic until softened (about 3-4 minutes).
Add Beans & Broth: Stir in white beans, green chilies, chicken broth, cumin, chili powder, and oregano.
Simmer: Bring to a boil, reduce heat, and simmer for 15 minutes.
Add Cream & Corn: Stir in heavy cream, corn, lime juice, and lime zest. Cook for another 5-7 minutes.
