Ingredients
  

For Salad

  • 1 cup lentil pasta dry
  • ½ cup cherry tomatoes halved
  • ¼ cup cucumber diced
  • ¼ cup bell pepper diced
  • 2 tablespoons olives sliced
  • 2 tablespoons red onion thin slices
  • 2 tablespoons fresh parsley chopped

For Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Boil lentil pasta.
  • Drain completely.
  • Add tomatoes to bowl.
  • Add cucumber.
  • Add bell pepper.
  • Add olives.
  • Add onions.
  • Add parsley.
  • Add cooked pasta.
  • Add olive oil to small bowl.
  • Add lemon juice.
  • Add mustard.
  • Add garlic powder.
  • Add salt.
  • Add pepper.
  • Whisk well.
  • Pour over salad.
  • Toss gently.
  • Taste and adjust.
  • Chill or serve.
