- 1 cup red lentils
- 1 cup water
- 1 cup coconut milk
- ½ cup chopped tomatoes
- ¼ cup chopped onions
- 1 tablespoon oil
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 teaspoon curry powder
- ½ teaspoon turmeric
- ½ teaspoon cumin
- ¼ teaspoon pepper
- ½ teaspoon salt
- 1 tablespoon lemon juice
- Fresh coriander for garnish
Rinse lentils well.
Heat oil in a pot.
Add onions, garlic paste, and ginger paste.
Cook 2 minutes until fragrant.
Add tomatoes.
Stir and cook 3 minutes.
Add curry powder, turmeric, cumin, pepper, and salt.
Mix well.
Add lentils and water.
Simmer 15 minutes.
Add coconut milk.

Add lemon juice.
Garnish with coriander.
