Ingredients
  

  • Vegan tilapia fillets soy or pea-based – 4 (about 5 oz each)
  • Olive oil – 2 tbsp
  • Lemon juice – 3 tbsp
  • Lemon zest – 1 tsp
  • Garlic minced – 2 cloves
  • Fresh parsley – 2 tbsp chopped
  • Fresh thyme – 1 tsp chopped
  • Salt – ½ tsp
  • Black pepper – ½ tsp

Instructions
 

  • Pat vegan tilapia fillets dry and place them in a shallow dish.
  • In a bowl, whisk olive oil, lemon juice, zest, garlic, parsley, thyme, salt, and pepper.
  • Pour marinade over fillets; let rest 8–10 minutes for flavor infusion.
  • Preheat grill to medium heat; lightly oil grates to prevent sticking.
  • Place fillets on grill, cook for 5–6 minutes per side until golden with light grill marks.
  • Brush with remaining marinade during last minute for brightness.
  • Remove, rest 2 minutes, and serve with lemon wedges.
