- Vegan tilapia fillets soy or pea-based – 4 (about 5 oz each)
- Olive oil – 2 tbsp
- Lemon juice – 3 tbsp
- Lemon zest – 1 tsp
- Garlic minced – 2 cloves
- Fresh parsley – 2 tbsp chopped
- Fresh thyme – 1 tsp chopped
- Salt – ½ tsp
- Black pepper – ½ tsp
Pat vegan tilapia fillets dry and place them in a shallow dish.
In a bowl, whisk olive oil, lemon juice, zest, garlic, parsley, thyme, salt, and pepper.
Pour marinade over fillets; let rest 8–10 minutes for flavor infusion.
Preheat grill to medium heat; lightly oil grates to prevent sticking.
Place fillets on grill, cook for 5–6 minutes per side until golden with light grill marks.
Brush with remaining marinade during last minute for brightness.
