Ingredients
  

  • 2 cups vegan chicken strips
  • 3 cups mixed greens
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup thinly sliced red onion
  • 1/4 cup roasted nuts or seeds
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried or fresh herbs thyme, parsley, oregano
  • Optional: avocado slices for garnish

Instructions
 

  • Warm vegan chicken strips in a skillet if desired.
  • Chop greens, tomatoes, and onion; place in a mixing bowl.
  • Add vegan chicken and roasted nuts on top of the greens.
  • Whisk lemon juice, olive oil, and herbs; drizzle over salad.
  • Toss gently to coat all ingredients evenly.
  • Garnish with avocado slices and serve immediately.
