- 2 cups seitan or extra-firm tofu pressed and sliced
- 3 tbsp olive oil
- 2 tbsp lemon juice freshly squeezed
- 1 tbsp lemon zest
- 4 garlic cloves minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp black pepper
- 1 tsp salt
- 2 tbsp fresh parsley chopped
Preheat oven to 400°F (200°C). Lightly oil baking dish.
In a bowl, whisk olive oil, lemon juice, zest, garlic, oregano, basil, salt, and pepper.
Coat seitan (or tofu slices) in marinade, ensuring all sides get a good soak.
Arrange coated pieces in baking dish. Pour remaining marinade over the top.
Bake for 30–35 minutes, flipping halfway, until golden edges appear and garlic smells irresistible.
Sprinkle parsley before serving.
