Ingredients
  

  • 2 cups seitan or extra-firm tofu pressed and sliced
  • 3 tbsp olive oil
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp lemon zest
  • 4 garlic cloves minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp black pepper
  • 1 tsp salt
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F (200°C). Lightly oil baking dish.
  • In a bowl, whisk olive oil, lemon juice, zest, garlic, oregano, basil, salt, and pepper.
  • Coat seitan (or tofu slices) in marinade, ensuring all sides get a good soak.
  • Arrange coated pieces in baking dish. Pour remaining marinade over the top.
  • Bake for 30–35 minutes, flipping halfway, until golden edges appear and garlic smells irresistible.
  • Sprinkle parsley before serving.
