- 1 cup almond flour
- 1/4 cup coconut oil melted
- 2 tbsp powdered erythritol
- 1 cup full-fat coconut cream
- 1/2 cup vegan cream cheese
- 1/4 cup powdered sweetener
- 1 tsp vanilla extract
- 1/2 cup strong brewed espresso or coffee cooled
- Cocoa powder for dusting
Preheat oven to 350°F (175°C).
Mix almond flour, melted coconut oil, and 1 tbsp erythritol; press into pan.
Bake for 5 minutes, then cool and break into pieces.
Whip coconut cream, cream cheese, sweetener, and vanilla until fluffy.
Layer coffee-soaked almond flour crumbs and cream mixture in cups.
Dust tops with cocoa powder.
Chill at least 2 hours before serving.
