Ingredients
  

  • 1 cup almond flour
  • 1/4 cup coconut oil melted
  • 2 tbsp powdered erythritol
  • 1 cup full-fat coconut cream
  • 1/2 cup vegan cream cheese
  • 1/4 cup powdered sweetener
  • 1 tsp vanilla extract
  • 1/2 cup strong brewed espresso or coffee cooled
  • Cocoa powder for dusting

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Mix almond flour, melted coconut oil, and 1 tbsp erythritol; press into pan.
  • Bake for 5 minutes, then cool and break into pieces.
  • Whip coconut cream, cream cheese, sweetener, and vanilla until fluffy.
  • Layer coffee-soaked almond flour crumbs and cream mixture in cups.
  • Dust tops with cocoa powder.
  • Chill at least 2 hours before serving.
