Ingredients
  

  • 4 bell peppers
  • 1 lb ground beef or plant-based option
  • 1/2 cup cauliflower rice
  • 1/2 cup shredded cheese
  • 1/4 cup chopped onion
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tomato sauce
  • 1 tbsp olive oil

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Slice the tops off the bell peppers and remove seeds. Set aside.
  • Heat olive oil in a skillet over medium heat. Add garlic and onion, cook until softened.
  • Add ground beef (or plant-based option) to the skillet. Cook until browned.
  • Stir in cauliflower rice, chili powder, cumin, salt, pepper, and tomato sauce. Simmer for 5 minutes.
  • Stuff the peppers with the beef mixture.
  • Place stuffed peppers in a baking dish, top with shredded cheese.
  • Bake for 25 minutes, or until peppers are tender and cheese is melted.
  • Serve hot and enjoy!
