- 12 large button mushrooms stems removed
- 1 cup vegan cream cheese
- ½ cup finely chopped spinach
- ¼ cup nutritional yeast
- 2 cloves garlic minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Preheat oven to 375°F (190°C).
Clean mushrooms and remove stems carefully.
Mix vegan cream cheese, spinach, nutritional yeast, garlic, salt, and pepper in a bowl.
Stuff each mushroom cap generously with the filling.
Drizzle olive oil over stuffed mushrooms.
Place mushrooms on baking tray and bake for 25 minutes.
