- 1 small yellow onion diced
- 2 garlic cloves minced
- 1 cup chopped celery
- 1 cup diced zucchini
- 1½ cups spicy vegan sausage crumbles like Beyond or homemade
- 4 cups vegetable broth
- 1 tsp smoked paprika
- ½ tsp red chili flakes or more, no judgment
- Salt and pepper to taste
- ½ cup canned coconut milk
- 2 tbsp fresh parsley chopped
- Optional: splash of lemon juice or apple cider vinegar
Heat olive oil in a large pot over medium heat.
Sauté onion and garlic until fragrant and lightly golden — around 3–4 minutes.
Stir in celery and zucchini. Let it sizzle for another 4 minutes.
Add vegan sausage crumbles. Cook for 5 minutes until slightly crisp.
Sprinkle in paprika, chili flakes, salt, and pepper. Stir with confidence.
Pour in broth. Bring to a simmer and let the flavors mingle for 10 minutes.
Add coconut milk and stir. Simmer for 2–3 minutes more.
