Ingredients
  

  • 1 tbsp olive oil
  • 1 small yellow onion diced
  • 2 garlic cloves minced
  • 1 cup chopped celery
  • 1 cup diced zucchini
  • cups spicy vegan sausage crumbles like Beyond or homemade
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • ½ tsp red chili flakes or more, no judgment
  • Salt and pepper to taste
  • ½ cup canned coconut milk
  • 2 tbsp fresh parsley chopped
  • Optional: splash of lemon juice or apple cider vinegar

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion and garlic until fragrant and lightly golden — around 3–4 minutes.
  • Stir in celery and zucchini. Let it sizzle for another 4 minutes.
  • Add vegan sausage crumbles. Cook for 5 minutes until slightly crisp.
  • Sprinkle in paprika, chili flakes, salt, and pepper. Stir with confidence.
  • Pour in broth. Bring to a simmer and let the flavors mingle for 10 minutes.
  • Add coconut milk and stir. Simmer for 2–3 minutes more.
  • Turn off heat. Stir in parsley and optional lemon juice for a little zing.
  • Serve hot, with smug pride and possibly no sharing.
