Ingredients
  

  • 1/4 cup chickpea flour
  • 1/4 cup water
  • 1/8 tsp turmeric
  • Pinch of salt
  • 1/2 cup fresh spinach chopped
  • 2 tbsp vegan feta cheese
  • 1 tsp olive oil
  • Optional: pinch black salt for "eggy" flavor

Instructions
 

  • In a bowl, whisk chickpea flour, water, turmeric, salt, and black salt (if using) into a smooth batter.
  • Heat olive oil in non-stick skillet over medium heat.
  • Sauté chopped spinach for 1–2 minutes until wilted.
  • Pour batter into pan, swirling gently to spread evenly.
  • Cook for 3–4 minutes until the edges set and bubbles form.
  • Sprinkle vegan feta over one side.
  • Gently fold omelette in half using a spatula.
  • Cook for another 2 minutes until heated through.
  • Slide onto plate and serve warm.
