- 1/4 cup chickpea flour
- 1/4 cup water
- 1/8 tsp turmeric
- Pinch of salt
- 1/2 cup fresh spinach chopped
- 2 tbsp vegan feta cheese
- 1 tsp olive oil
- Optional: pinch black salt for "eggy" flavor
In a bowl, whisk chickpea flour, water, turmeric, salt, and black salt (if using) into a smooth batter.
Heat olive oil in non-stick skillet over medium heat.
Sauté chopped spinach for 1–2 minutes until wilted.
Pour batter into pan, swirling gently to spread evenly.
Cook for 3–4 minutes until the edges set and bubbles form.
Sprinkle vegan feta over one side.
Gently fold omelette in half using a spatula.
Cook for another 2 minutes until heated through.
Slide onto plate and serve warm.
