- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/2 avocado sliced
- 2 tablespoons nutritional yeast
- Salt and pepper to taste
- 1 tablespoon olive oil
Whisk vegan eggs or prepare tofu scramble with nutritional yeast, salt, and pepper.
Sauté bell peppers and onions in olive oil until soft.
