  • 4 large yellow onions thinly sliced

  • 1 tsp fresh thyme or ½ tsp dried
  • 1 tbsp coconut aminos or tamari
  • 4 cups vegetable broth
  • 1 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • ½ cup vegan shredded cheese choose one that melts
  • Optional: fresh parsley or chives for garnish

Instructions
 

  • Heat olive oil in a large pot over medium-low heat.
  • Add onions and cook slowly for 25 minutes, stirring occasionally, until caramelized and golden.
  • Add salt, pepper, thyme, and garlic powder. Stir like you mean it.
  • Splash in coconut aminos and balsamic vinegar. Let it sizzle and smell amazing.
  • Pour in vegetable broth, bring to a boil, then simmer for 10 minutes.
  • Spoon soup into bowls, top each with vegan cheese.
