This vegan keto sandwich combines plant-based eggs and cheese wrapped in crisp lettuce for a low-carb, flavorful breakfast.

Ingredients
  

  • 2 vegan egg patties store-bought or homemade
  • 2 large lettuce leaves Romaine or Butter lettuce
  • 2 slices vegan cheese
  • 1 tablespoon vegan butter or oil
  • Salt and pepper to taste

Instructions
 

  • Heat vegan butter in skillet over medium heat.
  • Cook vegan egg patties 3-4 minutes per side until golden.
  • Season with salt and pepper.
  • Place one vegan cheese slice on each patty to melt slightly.
  • Lay lettuce leaves flat on a plate.
  • Stack cooked egg patties with cheese between lettuce leaves.
  • Fold lettuce around filling and enjoy immediately.
