  • 3 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons plant-based milk almond or oat
  • 1 tablespoon keto-friendly sweetener
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Mix almond and coconut flours with baking powder, cinnamon, sweetener, and salt in a mug.
  • Add plant milk and vanilla extract, stirring until smooth.
  • Swirl a little extra cinnamon and sweetener on top for the “roll” effect.
  • Microwave on high for 1 to 2 minutes until puffed and set.
  • Let cool slightly, then dig in guilt-free.
