Ingredients
  

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tbsp erythritol or keto sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsweetened almond milk
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • Coconut oil for frying
  • 2 tbsp cinnamon mixed with 3 tbsp erythritol for coating

Instructions
 

  • Combine dry ingredients in a bowl.
  • Add almond milk, melted coconut oil, and vanilla; mix to form a dough.
  • Fill piping bag with dough.
  • Pipe 3-4 inch strips onto parchment (for baking) or directly into hot oil (for frying).
  • Fry churros in coconut oil until golden and crispy, about 2-3 minutes each side.
  • Drain on paper towels.
  • Toss churros immediately in cinnamon sugar mixture.
  • Serve warm with vegan chocolate sauce or enjoy solo.
