- 1 cup almond flour
- 2 tbsp coconut flour
- 1 tbsp erythritol or keto sweetener
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsweetened almond milk
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- Coconut oil for frying
- 2 tbsp cinnamon mixed with 3 tbsp erythritol for coating
Combine dry ingredients in a bowl.
Add almond milk, melted coconut oil, and vanilla; mix to form a dough.
Fill piping bag with dough.
Pipe 3-4 inch strips onto parchment (for baking) or directly into hot oil (for frying).
Fry churros in coconut oil until golden and crispy, about 2-3 minutes each side.
Drain on paper towels.
Toss churros immediately in cinnamon sugar mixture.
Serve warm with vegan chocolate sauce or enjoy solo.
