Ingredients
  

  • 1 package vegan chicken substitute shredded (about 2 cups)
  • ½ cup vegan mayo
  • 1 tbsp Dijon mustard
  • 1 celery stalk finely chopped
  • 2 green onions sliced
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 8 large lettuce leaves butter lettuce or romaine

Instructions
 

  • In a mixing bowl, combine shredded vegan chicken, vegan mayo, Dijon mustard, celery, and green onions.
  • Add lemon juice, salt, and pepper. Mix well until creamy and flavorful.
  • Wash and dry lettuce leaves thoroughly.
  • Spoon generous amounts of the salad onto each leaf.
  • Wrap and serve immediately for fresh crunch.
