Ingredients
  

  • 2 chicken breasts cut into bite-sized cubes
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs beaten
  • 1 tablespoon olive oil

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix almond flour, Parmesan, garlic powder, Italian seasoning, salt, and pepper.
  • Dip each chicken piece in the beaten eggs, then coat with the almond flour mixture.
  • Place chicken on a greased baking sheet.
  • Drizzle olive oil over the chicken.
  • Bake for 15-20 minutes or until golden brown and cooked through.
  • Serve with a low-carb marinara sauce (optional, but highly recommended).
