- 2 large chicken breasts
- 4 cups Romaine lettuce chopped
- 1/4 cup Parmesan cheese grated
- 1/4 cup mayonnaise
- 1/4 cup unsweetened almond milk
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 garlic clove minced
- Salt and pepper to taste
- 1/2 cup keto-friendly croutons optional
Season chicken breasts with salt and pepper.
Heat olive oil in a skillet and cook chicken for 6-7 minutes per side, until golden and cooked through.
While chicken cooks, whisk together mayonnaise, almond milk, Dijon mustard, lemon juice, garlic, salt, and pepper.
Once chicken is done, slice into strips.
In a large bowl, toss chopped lettuce with the dressing.
Top with sliced chicken, Parmesan, and croutons (if using).
Serve immediately and enjoy!
