  • 1 tablespoon avocado oil
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 4 cups vegetable broth
  • 2 ripe avocados peeled and diced
  • 1/2 cup canned coconut milk full-fat for that creaminess
  • 1 tablespoon lime juice for sass and tang
  • 1/4 cup chopped fresh cilantro
  • Optional: 1 tablespoon nutritional yeast for bonus savory notes

Instructions
 

  • Heat avocado oil in saucepan over medium heat. Sauté chopped onion for 5 minutes until it starts to spill secrets.
  • Add garlic, cumin, chili powder, paprika, and salt. Stir well and cook 1 minute until your kitchen smells ridiculously amazing.
  • Pour in vegetable broth. Bring it to a gentle simmer while you dice those beautiful avocados.
  • Add avocado chunks and coconut milk. Simmer everything for 10 minutes so the flavors get flirty.
  • Use an immersion blender to blend the soup until smooth and creamy—unless chunky chaos is your style.
  • Stir in lime juice and chopped cilantro. Taste and adjust seasoning because your palate deserves it.
  • Serve hot. Top with extra cilantro or sliced avocado if you’re feeling fancy and slightly extra.
