- 1 tablespoon avocado oil
- 1 small onion chopped
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 4 cups vegetable broth
- 2 ripe avocados peeled and diced
- 1/2 cup canned coconut milk full-fat for that creaminess
- 1 tablespoon lime juice for sass and tang
- 1/4 cup chopped fresh cilantro
- Optional: 1 tablespoon nutritional yeast for bonus savory notes
Heat avocado oil in saucepan over medium heat. Sauté chopped onion for 5 minutes until it starts to spill secrets.
Add garlic, cumin, chili powder, paprika, and salt. Stir well and cook 1 minute until your kitchen smells ridiculously amazing.
Pour in vegetable broth. Bring it to a gentle simmer while you dice those beautiful avocados.
Add avocado chunks and coconut milk. Simmer everything for 10 minutes so the flavors get flirty.
Use an immersion blender to blend the soup until smooth and creamy—unless chunky chaos is your style.
Stir in lime juice and chopped cilantro. Taste and adjust seasoning because your palate deserves it.
Serve hot. Top with extra cilantro or sliced avocado if you’re feeling fancy and slightly extra.
