Ingredients

  • 1 large head cauliflower chopped into florets (about 5 cups)
  • 1 tbsp olive oil
  • 1 cup vegan shredded cheese cheddar-style
  • ½ cup unsweetened plant-based milk
  • 1 tbsp nutritional yeast
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • Optional: 1 tbsp vegan butter for richness
  • Optional: pinch of paprika for flair
  • Optional: ¼ cup gluten-free breadcrumbs for topping drama

Instructions

  • Preheat your oven to 375°F and lightly grease your casserole dish like your favorite cast-iron skillet.
  • Boil cauliflower florets in salted water for 5–7 minutes until fork-tender, but not mushy (we want firm, not soggy romance).
  • Drain cauliflower and set aside while you prepare your saucy magic.
  • In a mixing bowl, whisk together plant milk, olive oil, garlic powder, onion powder, nutritional yeast, and a pinch of salt and pepper.
  • Stir in half the vegan cheese. The rest? Save it for the grand finale.
  • Gently fold in cauliflower until every piece gets dressed for the party.
  • Pour mixture into your prepared baking dish like it’s going on a hot date.
  • Sprinkle remaining cheese and optional breadcrumbs over the top. Be generous—it’s not the time for modesty.
  • Bake for 20–25 minutes or until golden and bubbling like drama on reality TV.
  • Cool for 5 minutes, serve, and bask in casserole glory.

💡 Notes/Tips to Boost Flavor

  • Use smoked paprika for extra oomph—it’s giving flavor and attitude.
  • Add a handful of chopped spinach for color and smugness.
  • Want it spicy? Toss in some chili flakes like you mean it.
  • Let it rest before serving or risk molten mouth regret.
  • Don’t skip the vegan butter if you’re feeling fancy. It’s casserole couture.
