- 1 medium cauliflower head grated (about 3 cups)
- 1/4 cup almond flour
- 2 tablespoons ground flaxseed mixed with 6 tablespoons water as egg substitute
- 1/4 cup finely chopped onion
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil or coconut oil for frying
Grate cauliflower into fine crumbs, then squeeze out excess moisture with a towel.
Combine flaxseed “egg,” almond flour, onion, garlic powder, salt, and pepper in a bowl.
Mix in cauliflower crumbs until the mixture holds together.
Heat oil in skillet over medium heat.
Form mixture into patties, cook 3–4 minutes each side until golden.
Drain on paper towels and serve hot.
