These low-carb taco cups are filled with savory beef and cheese, perfect for satisfying your taco cravings without the guilt.

- 1 lb ground beef
- ½ onion diced
- 1 packet taco seasoning or homemade
- 1 cup shredded cheese
- 4 large eggs
- ½ cup sour cream optional
- Salsa optional
- Salt and pepper to taste
Preheat your oven to 350°F (175°C).
Brown ground beef with diced onion in a skillet over medium heat. Drain any excess fat.
Stir in taco seasoning and a little water (as per seasoning packet instructions). Let it simmer for a few minutes.
Grease a muffin tin and press a spoonful of beef mixture into each cup.
Crack an egg on top of the beef in each cup.
Sprinkle cheese over the eggs and beef.
Bake for 15 minutes or until the eggs set to your liking.
Top with sour cream and salsa if desired. Serve warm.
