These low-carb taco cups are filled with savory beef and cheese, perfect for satisfying your taco cravings without the guilt.

Ingredients
  

  • 1 lb ground beef
  • ½ onion diced
  • 1 packet taco seasoning or homemade
  • 1 cup shredded cheese
  • 4 large eggs
  • ½ cup sour cream optional
  • Salsa optional
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Brown ground beef with diced onion in a skillet over medium heat. Drain any excess fat.
  • Stir in taco seasoning and a little water (as per seasoning packet instructions). Let it simmer for a few minutes.
  • Grease a muffin tin and press a spoonful of beef mixture into each cup.
  • Crack an egg on top of the beef in each cup.
  • Sprinkle cheese over the eggs and beef.
  • Bake for 15 minutes or until the eggs set to your liking.
  • Top with sour cream and salsa if desired. Serve warm.
