Ingredients
  

  • 1 lb vegan ground beef or your favorite plant-based substitute
  • 4 cups fresh spinach chopped
  • 2 tablespoons olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup vegetable broth
  • 1 tablespoon fresh parsley chopped (for garnish)

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chopped onion and garlic. Sauté for 2 minutes.
  • Add the vegan ground beef to the skillet. Break it up and cook for 5 minutes until browned.
  • Stir in the paprika, cumin, salt, and pepper. Add the vegetable broth and mix everything together.
  • Add spinach and cook for another 3–4 minutes until the spinach wilts.
  • Garnish with fresh parsley and serve hot.
