- 1 lb vegan ground beef or your favorite plant-based substitute
- 4 cups fresh spinach chopped
- 2 tablespoons olive oil
- 1 small onion chopped
- 2 garlic cloves minced
- 1 teaspoon paprika
- ½ teaspoon cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup vegetable broth
- 1 tablespoon fresh parsley chopped (for garnish)
Heat olive oil in a skillet over medium heat. Add chopped onion and garlic. Sauté for 2 minutes.
Add the vegan ground beef to the skillet. Break it up and cook for 5 minutes until browned.
Stir in the paprika, cumin, salt, and pepper. Add the vegetable broth and mix everything together.
Add spinach and cook for another 3–4 minutes until the spinach wilts.
Garnish with fresh parsley and serve hot.
