Ingredients
  

  • 1 lb ground beef or your preferred plant-based substitute
  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 1 tablespoon taco seasoning
  • 1 teaspoon garlic powder
  • ½ teaspoon cumin
  • Salt and pepper to taste
  • 8 large lettuce leaves romaine or butter lettuce work best
  • ½ cup diced tomatoes
  • ¼ cup shredded cheese optional

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add chopped onion and sauté until softened, about 3 minutes.
  • Add ground beef to the skillet, breaking it up as it cooks.
  • Stir in taco seasoning, garlic powder, cumin, salt, and pepper.
  • Cook until the beef is browned and fully cooked, about 5–7 minutes.
  • Spoon the beef mixture into lettuce leaves, topping with diced tomatoes and shredded cheese (if using).
  • Serve immediately and enjoy your guilt-free meal!
