Ingredients
  

  • cups vegan ground beef
  • 2 teaspoons olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 3 cups fresh spinach chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • ¾ cup shredded vegan cheese
  • Optional topping: crushed red pepper chopped parsley

Instructions
 

  • Preheat oven to 375°F. Light a candle so it looks like you’re hosting a Pinterest-worthy dinner.
  • In a skillet, heat olive oil and sauté onion and garlic until fragrant—about 2 minutes.
  • Add vegan beef to skillet and cook for 5 minutes, breaking it up like your last situationship.
  • Toss in chopped spinach and stir until wilted, about 2–3 minutes.
  • Sprinkle in seasoning, paprika, salt, and pepper. Taste it. Taste it again. Now stop.
  • Pour mixture into a greased baking dish like you’ve done this a hundred times.
  • Top with vegan cheese and bake for 25 minutes until golden and bubbly.
  • Let it rest for 5 minutes unless you're into molten lava tongue.
  • Garnish with parsley or crushed red pepper if you feel extra.
  • Serve hot and tell everyone it took hours (we won’t snitch).
