- 1 tbsp olive oil
- 1 small onion diced
- 3 garlic cloves minced
- 1 cup mushrooms finely chopped (for that bacon-y bite)
- 1 cup raw cashews soaked or boiled
- 2½ cups vegetable broth
- 1 cup unsweetened almond milk
- 1 cup cauliflower chopped
- ½ cup carrots finely diced
- 1 tsp smoked paprika
- 2 tbsp nutritional yeast
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp soy sauce or tamari
- Salt & pepper to taste
- Chopped pickles optional garnish, but let’s be honest, mandatory
Heat olive oil in a large pot. Sauté onion and garlic until they’re soft and trying to impress you.
Add chopped mushrooms, cauliflower, and carrots. Cook for 5–7 minutes until they surrender to the heat.
Toss in broth, soy sauce, garlic powder, onion powder, paprika, and nutritional yeast. Stir like you mean it.
Simmer everything for 15 minutes, or until veggies are soft and willing.
Meanwhile, blend soaked cashews with almond milk until smooth enough to fake being dairy.
Add cashew mixture to the pot. Stir and blend the whole soup if you want it creamy.
Season with salt and pepper. Toss in some chopped pickles for a cheeky garnish.
Serve hot, with sass, and maybe a smirk.
