Ingredients
  

  • 2 ripe avocados halved and pitted
  • 1/2 cup coconut bacon or your favorite vegan bacon alternative
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • Fresh parsley optional, but makes it look fancy

Instructions
 

  • Heat a pan over medium, add olive oil, and crisp the coconut bacon for 2–3 minutes.
  • In a small bowl, mix lemon juice, garlic powder, salt, and pepper.
  • Scoop a bit of flesh from each avocado half to create space for stuffing.
  • Mash the removed avocado with the lemon mixture using a fork.
  • Fill each avocado “boat” with the mashed mix, then top with crispy vegan bacon.
  • Garnish with parsley and serve immediately with a smirk.
