Ingredients
  

  • 1 cup unsweetened shredded coconut
  • 1/2 cup almond butter smooth or crunchy
  • 1/4 cup coconut oil melted
  • 1/4 cup powdered erythritol or monk fruit sweetener
  • 1/4 cup vegan dark chocolate chips
  • 1/4 cup chopped almonds
  • 1 tsp vanilla extract

Instructions
 

  • Combine shredded coconut, almond butter, coconut oil, sweetener, and vanilla in a mixing bowl.
  • Fold in chopped almonds for that satisfying crunch.
  • Spoon mixture into silicone molds or mini cupcake trays.
  • Top each with a few vegan dark chocolate chips.
  • Freeze for at least 30 minutes until firm.
  • Pop out and enjoy whenever craving hits!
