- 1/2 cup almond butter smooth or crunchy
- 1/4 cup coconut oil melted
- 1/4 cup powdered erythritol or monk fruit sweetener
- 1/4 cup vegan dark chocolate chips
- 1/4 cup chopped almonds
- 1 tsp vanilla extract
Combine shredded coconut, almond butter, coconut oil, sweetener, and vanilla in a mixing bowl.
Fold in chopped almonds for that satisfying crunch.
Spoon mixture into silicone molds or mini cupcake trays.
Top each with a few vegan dark chocolate chips.
Freeze for at least 30 minutes until firm.
