  • Large Skillet
  • Tongs
  • Baking Tray
  • Knife
  • Spatula
  • Wire Rack

Ingredients

Chicken

  • 2 pieces boneless chicken breasts sliced thin
  • 1 cup buttermilk for tender texture
  • 1 teaspoon paprika smoky flavor
  • 1 teaspoon salt divided

Crunchy Coating

  • 1 cup all-purpose flour for coating
  • 0.5 cup cornstarch extra crispiness
  • 1 teaspoon garlic powder savory flavor
  • 0.5 teaspoon black pepper freshly ground
  • 2 cups vegetable oil for frying

Toast Assembly

  • 4 slices thick sourdough bread toasted
  • 4 slices cheddar cheese melted
  • 0.5 cup mayonnaise for sauce
  • 1 tablespoon hot sauce adjust to taste
  • 8 slices pickle chips for crunch
  • 1 cup shredded lettuce optional

Instructions

  • Whisk buttermilk, paprika, and half the salt in a bowl. Add chicken and marinate for juicy, flavorful texture.
  • Mix flour, cornstarch, garlic powder, pepper, and remaining salt in another bowl. Coat chicken evenly for crispy edges.
  • Heat oil in a skillet over medium-high heat. Fry chicken until deeply golden, crunchy, and fully cooked.
  • Transfer fried chicken onto a wire rack briefly to keep the coating crisp instead of soggy.
  • Toast sourdough slices lightly. Spread mayonnaise mixed with hot sauce over each warm piece.
  • Layer cheese, crispy chicken, pickles, and lettuce onto toast. Serve immediately while hot, crunchy, and melty.

Notes

Toast bread lightly for softer bites or longer for extra crunch. Freeze cooked chicken separately from bread for easier reheating. Assemble just before serving to avoid soggy toast. Customize flavors with spicy honey, ranch, or smoky barbecue sauce. Store leftovers refrigerated for up to three days and reheat chicken in the oven for best texture.
