Instructions
 

  • Mix flour, protein powder, cottage cheese, starter, water, and salt until a shaggy dough forms.
  • Knead gently until smooth and elastic. Let the dough rise until airy and slightly puffy.
  • Shape carefully and place into a proofing basket. Score the top for better expansion.
  • Bake in a preheated Dutch oven until the crust turns golden and the center stays fluffy.
  • Cool completely before slicing for the best texture and neat slices.

Notes

Bake slightly less for a softer crust or longer for a crispier finish. Freeze sliced bread in airtight bags and thaw as needed. Handle shaped dough gently during assembly to keep air pockets intact. Add herbs, seeds, or cheese for flavor customization. Store covered at room temperature for three days or refrigerate longer.
