Ingredients
  

Protein and Vegetables

  • 1 lb chicken breast cubed
  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1 cup bell peppers sliced
  • 1 cup carrots thinly sliced
  • 2 cloves garlic minced

Sauce

  • 2 tbsp low sodium soy sauce
  • 1 tbsp honey
  • 1 tsp cornstarch

Instructions
 

  • Heat olive oil in a large skillet. Add chicken and cook until golden outside and juicy inside.
  • Stir in garlic and vegetables. Cook until vegetables turn tender yet slightly crisp.
  • Whisk soy sauce, honey, and cornstarch. Pour over the skillet and stir until glossy and thickened.
  • Serve hot with rice or salad. Spoon extra sauce on top for added flavor.

Notes

For softer vegetables, cook a few extra minutes. Keep them crisp for more texture if preferred. Freeze cooked portions in airtight containers for up to two months. Cool ingredients slightly before assembly to prevent excess moisture. Swap vegetables or proteins for fun flavor variations. Store leftovers in the refrigerator for up to four days and reheat gently.
