Ingredients
  

Cookie Dough

  • 2 cups almond flour finely ground
  • 1/2 cup butter softened
  • 1/2 cup keto sweetener granulated
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup sugar free chocolate chips optional

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  • Cream butter and sweetener until fluffy. Add egg and vanilla, then mix until smooth.
  • Stir in almond flour, baking powder, and salt. Fold gently until a soft dough forms.
  • Mix in chocolate chips if desired. Scoop dough onto the tray and flatten slightly for even baking.
  • Bake for about 12 minutes until the edges look golden and the centers remain soft.
  • Cool briefly on the tray before moving to a rack. Serve warm or chilled for a firmer texture.

Notes

Bake a little less for softer cookies or slightly longer for crispier edges. Freeze dough balls for quick treats later. Chill sticky dough before shaping for easier assembly. Add cinnamon, nuts, or sugar free chips for new flavors. Store in an airtight container at room temperature for three days or refrigerate for one week.
