Ingredients
  

Crust

  • 1 1/2 cups almond flour finely ground
  • 3 tbsp unsalted butter melted
  • 2 tbsp erythritol

Cheesecake Filling

  • 16 oz cream cheese softened
  • 3/4 cup erythritol granulated
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1/2 cup sour cream

Instructions
 

  • Preheat the oven to 350°F and grease a springform pan. Stir crust ingredients until evenly moistened.
  • Press the crust mixture firmly into the pan. Bake until lightly golden and let it cool completely.
  • Beat cream cheese and erythritol until smooth. Add eggs one at a time, then mix in vanilla and sour cream for a silky filling.
  • Pour filling over the crust and smooth the surface. Bake until edges are set and the center stays slightly jiggly.
  • Cool slowly, refrigerate until firm, then slice and serve. Enjoy the creamy texture with your favorite keto toppings.

Notes

Bake less for a softer center or slightly longer for firmer slices. Freeze individual portions tightly wrapped for easy treats. Chill completely before removing from the pan to prevent cracks. Add lemon zest, cinnamon, or cocoa for flavor changes. Store covered in the refrigerator for up to five days.
