Ingredients
  

  • Vegan swordfish steaks soy or seitan-based – 4 (about 6 oz each)
  • Olive oil – 2 tbsp
  • Lemon juice – 2 tbsp
  • Lemon zest – 1 tsp
  • Garlic minced – 2 cloves
  • Fresh rosemary – 1 tsp chopped
  • Fresh thyme – 1 tsp chopped
  • Salt – ½ tsp
  • Black pepper – ½ tsp

Instructions
 

  • Pat vegan swordfish steaks dry with a paper towel.
  • In a bowl, whisk olive oil, lemon juice, zest, garlic, rosemary, thyme, salt, and pepper.
  • Coat steaks evenly with marinade; let rest 10 minutes.
  • Preheat grill to medium-high; oil grates lightly to prevent sticking.
  • Place steaks on grill; cook 6–7 minutes per side until golden with light char.
  • Brush with leftover marinade during final minute for brightness.
  • Remove from grill, rest 2 minutes, and serve with lemon wedges.
