  • Vegan snapper fillets soy or pea-based – 4 (about 6 oz each)
  • Olive oil – 2 tbsp
  • Garlic powder – ½ tsp
  • Paprika – ½ tsp
  • Salt – ½ tsp
  • Black pepper – ½ tsp

For the Citrus Sauce

  • Orange juice – ¼ cup
  • Lemon juice – 2 tbsp
  • Lime juice – 1 tbsp
  • Olive oil – 1 tbsp
  • Maple syrup – 1 tsp
  • Fresh parsley – 1 tbsp chopped

Instructions
 

  • Pat vegan snapper fillets dry with paper towels.
  • In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  • Coat fillets evenly; let rest 10 minutes.
  • Preheat grill to medium-high; lightly oil grates.
  • Place fillets on grill; cook 6–7 minutes per side until lightly charred.
  • In a saucepan, whisk orange juice, lemon juice, lime juice, olive oil, maple syrup, and parsley; simmer 2 minutes.
  • Remove snapper from grill, drizzle with citrus sauce, and serve hot.
