Ingredients
  

  • Vegan cod fillets soy or pea protein-based – 4 (about 6 oz each)
  • Vegan butter – 3 tbsp melted
  • Garlic minced – 2 cloves
  • Lemon juice – 2 tbsp
  • Fresh parsley – 2 tbsp chopped
  • Fresh dill – 1 tsp chopped
  • Salt – ½ tsp
  • Black pepper – ½ tsp

Instructions
 

  • Pat vegan cod fillets dry with a paper towel.
  • In a bowl, mix melted vegan butter, garlic, lemon juice, parsley, dill, salt, and pepper.
  • Brush fillets generously with herb butter mixture.
  • Preheat grill to medium-high; oil grates lightly.
  • Place cod on grill; cook 6–7 minutes per side until golden with char marks.
  • Brush with leftover butter mixture during last minute for extra flavor.
  • Remove, rest 2 minutes, and serve hot with lemon wedges.
