Ingredients
  

  • 2 cups vegan grilled chicken strips
  • 3 cups mixed greens
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup sliced red onion
  • 1/4 cup roasted nuts or seeds
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried or fresh herbs thyme, parsley, oregano
  • Optional: avocado slices for garnish

Instructions
 

  • Grill vegan chicken strips until lightly charred and smoky.
  • Chop greens, tomatoes, onion, and nuts; place in a mixing bowl.
  • Add grilled vegan chicken on top of the vegetables.
  • Whisk olive oil, lemon juice, and herbs; drizzle over salad.
  • Toss gently to coat evenly.
  • Garnish with avocado slices and serve immediately.
