Ingredients
  

For the Sandwich:

  • 4 slices of bread sourdough or whole wheat
  • 4 slices vegan cheese or ½ cup shredded vegan cheese
  • 1 large tomato thinly sliced
  • 2 tablespoons vegan butter or margarine
  • Pinch of salt
  • ¼ teaspoon black pepper
  • ½ teaspoon dried basil or oregano

For Serving:

  • Vegan ketchup or tomato soup optional but perfect

Instructions
 

  • Spread vegan butter on one side of each bread slice.
  • Heat a skillet on medium heat.
  • Place one slice of bread, buttered side down, on the pan.
  • Layer with vegan cheese, tomato slices, salt, pepper, and herbs.
  • Top with the second bread slice, buttered side up.
  • Grill for 3–4 minutes until the bottom turns golden.
  • Flip and toast the other side until the cheese melts beautifully.
  • Remove from pan, slice diagonally (because presentation matters), and serve warm.
