For the Sandwich:
- 4 slices of bread sourdough or whole wheat
- 4 slices vegan cheese or ½ cup shredded vegan cheese
- 1 large tomato thinly sliced
- 2 tablespoons vegan butter or margarine
- Pinch of salt
- ¼ teaspoon black pepper
- ½ teaspoon dried basil or oregano
For Serving:
- Vegan ketchup or tomato soup optional but perfect
Spread vegan butter on one side of each bread slice.
Heat a skillet on medium heat.
Place one slice of bread, buttered side down, on the pan.
Layer with vegan cheese, tomato slices, salt, pepper, and herbs.
Top with the second bread slice, buttered side up.
Grill for 3–4 minutes until the bottom turns golden.
Flip and toast the other side until the cheese melts beautifully.
Remove from pan, slice diagonally (because presentation matters), and serve warm.
