For the Sandwich:
- 4 slices bread sourdough or ciabatta
- 4 slices vegan cheese or ½ cup shredded vegan cheese
- 2 tablespoons vegan basil pesto
- 2 tablespoons vegan butter or margarine
- Pinch of salt
- ¼ teaspoon black pepper
For Serving:
- Cherry tomatoes or soup on the side optional but adorable
Spread vegan butter on one side of each bread slice.
Flip and spread basil pesto on the other side.
Heat a skillet on medium heat.
Place one bread slice, buttered side down, in the skillet.
Add vegan cheese and top with the second slice, buttered side up.
Grill for 3–4 minutes until golden and crisp.
Flip carefully and toast the other side until the cheese melts.
Remove from heat, slice diagonally, and serve immediately.
