Ingredients
  

For the Sandwich:

  • 4 slices bread sourdough or ciabatta
  • 4 slices vegan cheese or ½ cup shredded vegan cheese
  • 2 tablespoons vegan basil pesto
  • 2 tablespoons vegan butter or margarine
  • Pinch of salt
  • ¼ teaspoon black pepper

For Serving:

  • Cherry tomatoes or soup on the side optional but adorable

Instructions
 

  • Spread vegan butter on one side of each bread slice.
  • Flip and spread basil pesto on the other side.
  • Heat a skillet on medium heat.
  • Place one bread slice, buttered side down, in the skillet.
  • Add vegan cheese and top with the second slice, buttered side up.
  • Grill for 3–4 minutes until golden and crisp.
  • Flip carefully and toast the other side until the cheese melts.
  • Remove from heat, slice diagonally, and serve immediately.
