Ingredients
  

  • For the Sandwich:
  • 4 slices sourdough or whole-grain bread
  • ½ cup vegan mozzarella or cheddar cheese
  • 1 cup mushrooms button, cremini, or shiitake, sliced
  • 1 tablespoon vegan butter or olive oil
  • 1 garlic clove minced
  • ¼ teaspoon thyme or oregano
  • Pinch of salt
  • ¼ teaspoon black pepper
  • For Serving:
  • Vegan aioli or tomato soup

Instructions
 

  • Heat a skillet over medium heat and add vegan butter.
  • Sauté garlic until fragrant, then toss in sliced mushrooms.
  • Cook 4–5 minutes until golden and slightly crispy.
  • Sprinkle thyme, salt, and pepper, then set aside.
  • Butter one side of each bread slice.
  • Place one slice buttered side down on the skillet.
  • Add vegan cheese and sautéed mushrooms.
  • Top with the second bread slice, buttered side up.
  • Grill 3–4 minutes per side until golden brown.
  • Slice diagonally and serve hot with soup or dip.
