- For the Sandwich:
- 4 slices sourdough or whole-grain bread
- ½ cup vegan mozzarella or cheddar cheese
- 1 cup mushrooms button, cremini, or shiitake, sliced
- 1 tablespoon vegan butter or olive oil
- 1 garlic clove minced
- ¼ teaspoon thyme or oregano
- Pinch of salt
- ¼ teaspoon black pepper
- For Serving:
- Vegan aioli or tomato soup
Heat a skillet over medium heat and add vegan butter.
Sauté garlic until fragrant, then toss in sliced mushrooms.
Cook 4–5 minutes until golden and slightly crispy.
Sprinkle thyme, salt, and pepper, then set aside.
Butter one side of each bread slice.
Place one slice buttered side down on the skillet.
Add vegan cheese and sautéed mushrooms.
Top with the second bread slice, buttered side up.
Grill 3–4 minutes per side until golden brown.
Slice diagonally and serve hot with soup or dip.
