In a bowl, mix vegan feta, basil, parsley, oregano, salt, pepper, and lemon juice.
Spread vegan butter on one side of each bread slice.
Heat skillet over medium heat.
Place one slice, buttered side down, in the skillet.
Add half the feta-herb mixture evenly on top.
Cover with the second slice, buttered side up.
Grill for 3–4 minutes until golden brown.
Flip carefully and cook until the filling warms and melts slightly.
Slice diagonally and serve hot with soup or dip.
