For the Sandwich:
- 4 slices sourdough or French bread
- ½ cup vegan brie cheese soft and spreadable
- 3 tablespoons cranberry sauce sweetened or homemade
- 1 tablespoon vegan butter
- Pinch of salt
- Dash of black pepper
Optional Add-ons:
- 1 teaspoon balsamic glaze
- Fresh thyme leaves for garnish
Heat skillet over medium heat.
Spread vegan butter on one side of each bread slice.
Spread vegan brie on the other side of two slices.
Add a layer of cranberry sauce over the cheese.
Sprinkle salt and pepper to balance the sweetness.
Top with remaining bread, buttered side facing out.
Grill for 3–4 minutes per side until golden and gooey.
Press gently with spatula for crisp edges.
Slice in half (preferably diagonally — we’re not animals).
Serve warm and pretend you’re hosting brunch in Paris.
