- 1 cup firm tofu cubes (vegan chicken swap)
- ½ cup chopped tomatoes
- ½ cup sliced cucumbers
- ½ cup bell peppers
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- ½ teaspoon garlic paste
- ½ teaspoon paprika
- ¼ teaspoon pepper
- ¼ teaspoon salt
- 2 tablespoons fresh parsley
In a bowl, mix olive oil, lemon juice, oregano, garlic paste, paprika, pepper, and salt.
Add tofu cubes and coat well.
Heat a skillet or grill pan.
Grill tofu 3–4 minutes per side.
Add bell peppers and cook 2 minutes.
Plate grilled tofu with tomatoes and cucumbers.
Sprinkle parsley.
