Ingredients
  

For the crust:

  • 1 ½ cups gluten-free graham cracker crumbs
  • ¼ cup brown sugar
  • 6 tbsp unsalted butter melted

For the cheesecake filling:

  • 3 8 oz packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream

For the apple topping:

  • 3 medium apples peeled, cored, and sliced
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tbsp lemon juice

For the crumble topping:

  • 1 cup gluten-free rolled oats
  • ½ cup gluten-free flour
  • ½ cup brown sugar
  • 6 tbsp cold butter cubed

Instructions
 

  • Make the crust: Combine graham cracker crumbs, brown sugar, and melted butter. Press into the bottom of the springform pan.
  • Prepare the cheesecake filling: Beat softened cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream. Mix well.
  • Prepare the apple topping: Toss apple slices with sugar, cinnamon, nutmeg, and lemon juice. Set aside.
  • Make the crumble topping: Combine oats, gluten-free flour, brown sugar, and cold butter. Rub until the mixture forms crumbs.
  • Assemble the cheesecake: Pour the cheesecake mixture over the crust. Layer spiced apples on top and sprinkle crumble topping over them.
  • Bake: Preheat oven to 325°F (163°C). Bake for 50-60 minutes or until cheesecake is set.
  • Cool and serve: Let cheesecake cool, refrigerate for at least 2 hours before serving.
