For the crust:
- 1 ½ cups gluten-free graham cracker crumbs
- ¼ cup brown sugar
- 6 tbsp unsalted butter melted
For the cheesecake filling:
- 3 8 oz packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup sour cream
For the apple topping:
- 3 medium apples peeled, cored, and sliced
- 2 tbsp sugar
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tbsp lemon juice
For the crumble topping:
- 1 cup gluten-free rolled oats
- ½ cup gluten-free flour
- ½ cup brown sugar
- 6 tbsp cold butter cubed
Make the crust: Combine graham cracker crumbs, brown sugar, and melted butter. Press into the bottom of the springform pan.
Prepare the cheesecake filling: Beat softened cream cheese and sugar until smooth. Add eggs, vanilla, and sour cream. Mix well.
Prepare the apple topping: Toss apple slices with sugar, cinnamon, nutmeg, and lemon juice. Set aside.
Make the crumble topping: Combine oats, gluten-free flour, brown sugar, and cold butter. Rub until the mixture forms crumbs.
Assemble the cheesecake: Pour the cheesecake mixture over the crust. Layer spiced apples on top and sprinkle crumble topping over them.
