Ingredients
  

  • 1 lb chicken breast cooked and shredded
  • 1 can 15 oz white beans (drained and rinsed)
  • 1 can 4 oz diced green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 medium onion diced
  • 6 cloves garlic minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

  • Cook the Chicken: In a large pot, sauté onions and garlic until fragrant, about 3 minutes.
  • Add the Base: Stir in chicken, beans, green chilies, chicken broth, cumin, chili powder, and smoked paprika.
  • Simmer: Let it simmer for 15 minutes to combine all the flavors.
  • Add Cream & Cheese: Stir in heavy cream and shredded cheddar cheese. Continue simmering until cheese is melted and smooth.
  • Season: Adjust seasoning with salt and pepper to taste.
