- 1 lb chicken breast cooked and shredded
- 1 can 15 oz white beans (drained and rinsed)
- 1 can 4 oz diced green chilies
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 4 cups chicken broth
- 1 medium onion diced
- 6 cloves garlic minced
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
Cook the Chicken: In a large pot, sauté onions and garlic until fragrant, about 3 minutes.
Add the Base: Stir in chicken, beans, green chilies, chicken broth, cumin, chili powder, and smoked paprika.
Simmer: Let it simmer for 15 minutes to combine all the flavors.
Add Cream & Cheese: Stir in heavy cream and shredded cheddar cheese. Continue simmering until cheese is melted and smooth.
