  • For the Garlic Sauce:
  • 4 cloves garlic minced
  • 1/2 cup vegetable broth
  • 1 tablespoon olive oil
  • 1/2 cup heavy cream or coconut cream
  • 1 tablespoon butter
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Instructions
 

  • n a bowl, mix pumpkin puree, flour, egg, salt, and pepper until dough forms.
  • Roll dough into logs, then cut into gnocchi-sized pieces.
  • Boil gnocchi in salted water until they float, about 2-3 minutes.
  • Meanwhile, sauté garlic in olive oil until fragrant, about 1 minute.
  • Add vegetable broth, then stir in cream and butter. Simmer for 3-5 minutes.
  • Add gnocchi to garlic sauce and toss to coat.
  • Garnish with fresh parsley before serving.
