Instructions
Sauté the Garlic and Onion: Heat olive oil in a large pot. Sauté garlic and onion until fragrant and soft.
Add Potatoes and Broth: Toss in diced potatoes and vegetable broth. Bring to a boil, then simmer for 15-20 minutes.
Blend It: Once potatoes are tender, blend until smooth using an immersion blender (or a regular blender).
Stir in Cream: Add non-dairy milk and cream. Stir to combine, and heat until warm.
Season: Add thyme, salt, and pepper. Adjust seasoning to taste.
Serve: Ladle into bowls and garnish with fresh parsley.
