Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • ½ cup low-sodium soy sauce
  • cup honey
  • ¼ cup rice vinegar
  • 2 tablespoons brown sugar
  • 4 cloves garlic minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame oil
  • ½ teaspoon red pepper flakes optional
  • 2 tablespoons cornstarch
  • ¼ cup cold water
  • Sesame seeds & sliced green onions for garnish, optional
  • Cooked white rice for serving

Instructions
 

Step 1: Prepare the Sauce

  • Whisk together soy sauce, honey, rice vinegar, brown sugar, garlic, ginger, sesame oil, and red pepper flakes.

Step 2: Assemble in the Crockpot

  • Place chicken in the slow cooker and pour the sauce over it.
  • Cover and cook on LOW for 4-5 hours, or until chicken is tender.

Step 3: Shred the Chicken

  • Remove chicken from the Crockpot and shred it with two forks.

Step 4: Thicken the Sauce

  • Mix cornstarch with cold water, pour into the Crockpot, and stir well.
  • Cook for another 15-20 minutes until the sauce thickens.

Step 5: Combine & Serve

  • Return shredded chicken to the sauce, mix well, and let it absorb the flavor.
  • Serve over hot rice and garnish with sesame seeds and green onions.
