Ingredients
  

For the Beef & Sauce:

  • 1.5 lbs beef chuck thinly sliced
  • ½ cup low-sodium soy sauce
  • ¼ cup hoisin sauce
  • 3 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic minced
  • 1 teaspoon grated ginger
  • 1 teaspoon crushed red pepper flakes
  • ½ teaspoon Szechuan peppercorns ground
  • ½ cup beef broth

For the Vegetables & Garnish:

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • ½ cup green onions chopped
  • 2 tablespoons cornstarch + 2 tablespoons water
  • Steamed rice for serving
  • Sesame seeds for garnish

Instructions
 

Step 1: Prep the Ingredients

  • Thinly slice the beef.
  • Mince garlic, grate ginger, and slice bell peppers.

Step 2: Assemble in the Crockpot

  • Place the beef in the slow cooker.
  • In a bowl, mix soy sauce, hoisin sauce, honey, vinegar, sesame oil, garlic, ginger, red pepper flakes, and broth.
  • Pour the sauce over the beef and stir.

Step 3: Let It Cook

  • Cover and cook on LOW for 6 hours or HIGH for 3 hours.
  • Add bell peppers in the last 30 minutes.

Step 4: Thicken the Sauce

  • Mix cornstarch with water and stir into the crockpot.
  • Cook for another 10 minutes until the sauce thickens.

Step 5: Serve & Enjoy

  • Spoon the beef over rice.
  • Top with green onions and sesame seeds.
